Food Technologist


Lucy MacLellan (BSc (Hons) Nutrition) is a Food Technologist in the Dietetics, Nutrition & Biological Sciences, Physiotherapy, Podiatry & Radiography Division.

  • Overview

Lucy is a Registered Associate Nutritionist (ANutr) and a QMU BSc (Hons) Nutrition graduate.  After graduating from QMU in 2015, Lucy undertook various volunteering roles (along with her role in retail) which focused on health improvement and promotion through nutrition within vulnerable groups – an area she is passionate about. These roles saw Lucy work with the Cyrenians to increase the life skills and confidence of vulnerable individuals and as part of a small team to distribute food to those in crisis with The Trussell Trust.

In 2017, Lucy assumed the role of Food Technologist within the Scottish Centre for Food Development and Innovation. Based at QMU, the SCFDI work with a broad range of food and drink companies to develop new and innovative products and to reformulate existing products. Within this role, Lucy has successfully undertaken the role of project lead for contemporary confectionary and vegan alternative new product development projects, whilst assisting with NPD for sugar-reduced bakery and children’s products. More recently, Lucy has also successfully undertaken NPD project lead for a new, innovative, dairy-based product which is hoped to improve sustainability by re-purposing surplus produce. 

The role of Food Technologist also sees Lucy facilitating all aspects of consumer testing from participant recruitment to data analysis and report compilation.
