Dr Emad Al-Dujaili - Research Profile

Dr Emad Al-Dujaili Senior Lecturer in Biochemistry and Nutrition Queen Margaret University, Edinburgh
Dr Al-Dujaili is a qualified pharmacist and biochemist having trained at Barts and London Hospitals Medical School, University of London where he was awarded a PhD in Clinical Biochemistry/Endocrinology. Dr Al-Dujaili has a strong background in academia and industry having worked as senior research fellow at University of Edinburgh and a project leader at Serono Diagnostics (specialists in research and development of diagnostic kits for the measurement of hormones in the body).
For the past 12 years Dr Al-Dujaili has worked at Queen Margaret University, Edinburgh within the subject area of Dietetics, Nutrition and Biological Sciences where he has been conducting academic and commercially sponsored research on the health and well-being of individuals, groups and communities.
His work focuses on the following areas:
Effects of functional foods – specifically green tea & coffee dark chocolate, fruit juices including pomegranate – on cardiovascular risk factors including hypertension and obesity;
- Interaction of functional food with the control body mechanisms such as steroid hormones effect on metabolism;
- Satiety (feeling full) – the effects of certain nutrients on individual satiety and the impact on overweight and obesity and
- Effect on vitamin D on cardiovascular risk factors such as hypertension and arterial health.
CONSULTANCY
Queen Margaret University has a range of experts who are available to work with business, research partners and government organisations.
Recently Dr Al-Dujaili has provided his nutritional expertise and conducted research for reputable commercial organisations including Barry Callebaut (a Belgium based company which manufactures specially formulated dark chocolate), and Pomegreat UK (producers and distributors of many varieties of Pomegranate juice).
Dr Al-Dujaili is also an expert in the measurement of steroid hormones in biological fluid (saliva, blood and urine). He has carried out several research and consultancy projects on the development and validation of ELISA methods to estimate steroid hormone levels.
