Following completion of my PhD I held post-doctoral research positions in Glasgow at the Beatson Institute for Cancer Research and University of Glasgow, Faculty of Veterinary Medicine. At that time I worked on the molecular biology and virology of leukaemia.
I teach a wide variety of biomedical subjects including cell biology and genetics, immunology, international health and nutrition, microbiology and molecular biology, to undergraduate, masters and PhD students across the School of Health Sciences. My research interest is the role of diet in chronic inflammatory disease (pathology, progression and prevention) and health (satiety and cognitive function) with a special focus on the action of phytochemicals. At present, I am director of studies or supervisor of 4 PhD students.
